The classic Beer Can Chicken

If you’ve never perched poultry onto a can of beer, now is the time.

The grill is the perfect–quintessential, even–place for creating a beer-infused dinner masterpiece that’ll wow your taste buds and your guests.

Even better… it’s super easy.

First, go to your local butcher and get yourself a nice 3-pound chicken. Because the chicken is tender and moist, and it’s natural flavor is what is highlighted the most, you want to be sure you’re getting a good quality piece of meat.

Wash and drain the chicken well.

While it is draining, preheat a charcoal grill over high heat. When the coals are hot, glowing, and ready to go, carefully push them to the sides of the grill to have an open space.

Back to your chicken, coat the inside and outside with seasoning salt, regular salt, and lots of black pepper and garlic powder.

Open the can of beer and carefully insert a single sprig of rosemary. This step is optional, but it will deliver a subtle hint of extra flavor that is sure to please.

Place the beer into the cavity of the rear of the chicken. Transfer the beer and chicken to the centre of the grill, facing of one of the sides of the coals. Make sure it is steady – you don’t want to spill any beer.

Cover the grill and cook until the chicken is done. Depending on your grill and chicken, it will take about 45 minutes to an hour. Turn a few times during the cooking portion, careful not to leave the lid off for too long.

The chicken is finished cooking when the juice runs clear.

If you have a Big Green Egg,  heat it up to 450F, and the put chicken on for 20 minutes. Reduce heat to 375 and cook an additional hour and 15 minutes or so.

And if you don’t have a barbecue but want the same taste? You can do it in the oven at 400F degrees for about an hour.
