Savory strawberry recipes
for the dressing:
8 ounces firm silken tofu, pureed
5 tablespoons agave nectar
1/3 cup non-dairy milk
3 tablespoons red wine vinegar
2 tablespoons poppy seeds
salt to taste
for the salad:
1 pint fresh strawberries, sliced
1 head red leaf lettuce, rinsed and torn
1 red onion, thinly sliced
In a bowl, mix together all dressing ingredients until smooth, adding more milk if necessary. Divide the lettuce into four to six salad bowls, and top each with strawberries and onions. Pour dressing over before serving.
Strawberry Spinach Salad
12 oz. fresh baby spinach
1 tablespoon fresh dill
1 pint strawberries, sliced
1 red onion, thinly sliced
for the dressing:
1/3 cup olive oil
1/4 cup red wine vinegar
2 tablespoons agave nectar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon dijon mustard
1 pinch cayenne pepper
salt and fresh ground pepper to taste
Evenly distribute spinach, dill, strawberries and onions on four plates. In a shaker, mix together all dressing ingredients, and drizzle before serving.
Sweet and Sour Strawberries
1 1/2 pounds fresh strawberries, rinsed and, sliced
2 tablespoons brown sugar (optional)
1 tablespoon high quality balsamic vinegar
1/4 teaspoon freshly ground black pepper
If strawberries are at the peak of the season, you might find the sugar unnecessary. If you are using it, toss with strawberries in a large bowl and let sit about 10 minutes.
Whisk together balsamic vinegar and pepper in a small bowl. Toss with berries to coat, then divide evenly among four bowls.
